茄子田樂燒(3至4人份)
茄子以日式麵豉調味焗香,口感柔軟焦香,是一道零失敗的日式家庭料理。
| 材料 | Ingredients |
| 茄子 2條 | Eggplants 2 pieces |
| 橄欖油 1湯匙 | Olive oil 1 tbsp |
| 芝麻 適量 | Sesame some |
| 葱花 適量 | Choppped spring onion some |
| 調味料 | Seasoning |
| 日式芝麻麵豉醬 2湯匙 | Miso sesame sauce 2 tbsp |
| 味醂 2湯匙 | Mirin 2 tbsp |
| 糖 1湯匙 | Sugar 1 tbsp |
做法 Method
Step 1: 焗爐預熱至180°C,茄子洗淨。 Preheat the oven to 180°C and rinse the eggplants.
Step 2: 茄子去蒂及對切,在表面輕輕劃出格子狀。 Remove the stems and cut the eggplant into halves, and lightly make grids on the surface.
Step 3: 茄子塗上橄欖油。Brush the eggplant with olive oil.
Step 4: 茄子放入焗爐,以180°C焗十分鐘。 Bake the eggplant at 180°C for 10 minutes.
Step 5: 調味料拌勻。 Mix the seasoning together.
Step 6: 取出茄子,在表面塗上調味料。 Take out the eggplant and brush the seasoning on top.
Step 7: 茄子放入焗爐以180°C焗八至十五分鐘或至表面微焦。 Bake the eggplant again in the oven at 180°C for 8 to 15 minutes or until the surface is slightly charred.
Step 8: 茄子上碟,灑上芝麻粒和葱花,即成。 Dish up the eggplant. Sprinkle with sesame seeds and chopped spring onion and serve.
小貼士 Tips:茄子劃出格子狀,容易吸收醬汁精華。 Score the flesh of the eggplant into diamonds pattern for better absorption of the sauce.
