椒麻豬扒(4人份)
自家製椒麻醬汁可隨個人口味調校,淋在煎至外脆內嫩的豬扒,醒胃可口。

材料 Ingredients
豬扒 450克 Pork chop 450g
麵粉 適量 Flour to coat
油 6湯匙 Oil 6 tbsp
調味料 Seasoning
老抽、生抽 各1湯匙 Dark and light soy sauce 1 tbsp each
米酒、麻油 各1湯匙 Rice wine and sesame oil 1 tbsp each
糖 2茶匙 Sugar 2 tsp
鹽 1茶匙 Salt 1 tsp
椒麻汁 Chili pepper sauce
花椒 1茶匙 Sichuan pepper 1 tsp
醋 2湯匙 Vinegar 2 tbsp

糖 1湯匙 Sugar 1 tbsp
白胡椒粉 少許 White pepper powder some
葱 1棵 Spring onion 1 stalk
蒜頭 2粒 Garlic 2 cloves
紅辣椒 1/2隻 Red chili pepper 1/2 pc

 

做法 Method

Step 1: 豬扒洗淨、抹乾,用刀背拍鬆。Clean the pork chops and pat dry, pound with the back of a knife.

Step 2: 加入調味料混合,醃一小時。Add the seasoning and mix well and marinate for 1 hour.

Step 3: 葱、蒜頭、紅辣椒洗淨及切碎。Clean and chop the spring onion, garlic and red chili pepper.

鑊內燒熱油兩湯匙,花椒以小火爆香,隔出花椒。Heat 2 tbsp oil in a pan. Saute the Sichuan pepper until fragrant, remove the Sichuan pepper.

將醃好的豬扒均勻沾上麵粉。Coat the marinated pork chops evenly in flour.

鑊中燒油四湯匙,豬扒煎至金黃及熟透,撈起。Heat 4 tbsp oil in a pan, add the pork chops and fry until golden brown and cooked. Remove.
