椒麻猪扒(4人份)
自家制椒麻酱汁可随个人口味调校,淋在煎至外脆内嫩的猪扒,醒胃可口。

材料 Ingredients
猪扒 450克 Pork chop 450g
面粉 适量 Flour to coat
油 6汤匙 Oil 6 tbsp
调味料 Seasoning
老抽、生抽 各1汤匙 Dark and light soy sauce 1 tbsp each
米酒、麻油 各1汤匙 Rice wine and sesame oil 1 tbsp each
糖 2茶匙 Sugar 2 tsp
盐 1茶匙 Salt 1 tsp
椒麻汁 Chili pepper sauce
花椒 1茶匙 Sichuan pepper 1 tsp
醋 2汤匙 Vinegar 2 tbsp
老抽、生抽 各1汤匙 Dark and light soy sauce 1 tbsp each
糖 1汤匙 Sugar 1 tbsp
白胡椒粉 少许 White pepper powder some
葱 1棵 Spring onion 1 stalk
蒜头 2粒 Garlic 2 cloves
红辣椒 1/2只 Red chili pepper 1/2 pc

 

做法 Method

Step 1: 猪扒洗净、抹干,用刀背拍松。Clean the pork chops and pat dry, pound with the back of a knife.

Step 2: 加入调味料混合,腌一小时。Add the seasoning and mix well and marinate for 1 hour.

Step 3: 葱、蒜头、红辣椒洗净及切碎。Clean and chop the spring onion, garlic and red chili pepper.

镬内烧热油两汤匙,花椒以小火爆香,隔出花椒。Heat 2 tbsp oil in a pan. Saute the Sichuan pepper until fragrant, remove the Sichuan pepper.

将腌好的猪扒均匀沾上面粉。Coat the marinated pork chops evenly in flour.

镬中烧油四汤匙,猪扒煎至金黄及熟透,捞起。Heat 4 tbsp oil in a pan, add the pork chops and fry until golden brown and cooked. Remove.
