冬瓜火腩燴鳳爪
Braised Chicken Feet with Winter Melon and Roasted Pork Belly
冬瓜加火腩味道鹹淡得宜,另有鳳爪增添風味,是最佳下飯菜。

分量:4人份 需時:35分鐘
材料:
鳳爪 1罐
冬瓜 1斤
火腩 半斤
冬菇 4隻
芹菜 1條
薑 3片
蠔油 1湯匙
水 適量
油 適量
Ingredients:
Chicken Feet with Black Bean Sauce 1 can
Winter melon 1 catty
Roasted pork belly 1/2 catty
Dried shiitake mushrooms 4 pieces
Chinese celery 1 stalk
Ginger 3 pieces
Oyster sauce 1 tbsp
Water appropriate
Oil a little

做法:
1. 冬瓜去皮及切件,下鹽蒸至軟身。
Peel and cut the winter melon into pieces. Steam it with salt until soft.
2. 冬菇浸軟切塊,芹菜切段。
Cut the soaked shiitake mushrooms into pieces, section the celery.

3. 火腩汆水備用。
Blanch the roasted pork belly. Set aside.
4. 起油鑊,爆香薑片。
Heat oil in a wok, fry the ginger pieces until fragrant.

5. 加火腩爆炒至焦香,加蠔油調味。
Fry the roasted pork belly uitil fragrant, add oyster sauce to taste.
6. 加冬瓜及水燴煮5分鐘。
Add the winter melon and water, braise it for 5 minutes.

7. 加鳳爪再燴3分鐘。
Add the chicken feet and braise for another 3 minutes.
8. 生粉水埋芡,加芹菜即成。
Thicken the sauce with corntarch water, stir in Chinese celery. Serve.

小貼士:冬瓜含豐富水分,是炎夏最佳入饌食材。
Tip:Water melon has high content of water and is the best summer ingredient.
