蝦醬馬蹄煎肉餅(2人份)
蒸肉餅是家常菜式,愛香口的,不妨加入惹味蝦醬煎煮,即成下飯佳品。
| 材料 | Ingredients |
| 免治豬肉 300克 | Minced pork 300g |
| 馬蹄 4粒 | Water chestnuts 4 pcs |
| 芫荽(切碎) 適量 | Chopped coriander some |
| 油 適量 | Oil some |
| 免治豬肉醃料 | Marinade for minced pork |
| 蝦膏 1湯匙 | Dried shrimp paste 1 tbsp |
| 生抽 1茶匙 | Light soy sauce 1 tsp |
| 糖 1茶匙 | Sugar 1 tsp |
| 麻油 1茶匙 | Sesame oil 1 tsp |
| 栗粉 1茶匙 | Cornstarch 1 tsp |
| 水 1湯匙 | Water 1 tbsp |
| 紹興酒 1茶匙 | Shaoxing wine 1 tsp |
做法 Method
Step 1: 馬蹄去皮及切粒,芫荽切碎。Peel and dice the chestnuts, and chop the coriander.
Step 2: 免治豬肉加入醃料拌勻,醃二十分鐘。Add the marinade to the minced pork, mix well, and marinate for 20 minutes.
Step 3: 免治豬肉順時針拌至起膠。Stir the minced pork clockwise until it is sticky.
Step 4: 加入馬蹄和芫荽碎拌勻。Add the water chestnut and chopped coriander, mix well.
Step 5: 將適量免治豬肉搓成球狀,再壓成餅狀。Knead an appropriate amount of the minced pork into a ball and press it into a cake.
Step 6: 鑊內以大火燒熱油,下肉餅。Heat oil in a pan over high heat, then add in the patties.
Step 7: 肉餅煎至金黃,蓋上鑊蓋,以慢火煎至熟透。Fry the patties until golden, cover the pan with a lid, and fry over low heat until cooked through.
Step 8: 肉餅上碟,即成。Transfer the patties to a plate, serve.
小貼士 Tips
用大火煎肉餅兩面,可以鎖住肉汁。Fry the patties on both sides over high heat to lock the juice.
