虾酱马蹄煎肉饼(2人份)
蒸肉饼是家常菜式,爱香口的,不妨加入惹味虾酱煎煮,即成下饭佳品。
| 材料 | Ingredients |
| 免治猪肉 300克 | Minced pork 300g |
| 马蹄 4粒 | Water chestnuts 4 pcs |
| 芫荽(切碎) 适量 | Chopped coriander some |
| 油 适量 | Oil some |
| 免治猪肉腌料 | Marinade for minced pork |
| 虾膏 1汤匙 | Dried shrimp paste 1 tbsp |
| 生抽 1茶匙 | Light soy sauce 1 tsp |
| 糖 1茶匙 | Sugar 1 tsp |
| 麻油 1茶匙 | Sesame oil 1 tsp |
| 栗粉 1茶匙 | Cornstarch 1 tsp |
| 水 1汤匙 | Water 1 tbsp |
| 绍兴酒 1茶匙 | Shaoxing wine 1 tsp |
做法 Method
Step 1: 马蹄去皮及切粒,芫荽切碎。Peel and dice the chestnuts, and chop the coriander.
Step 2: 免治猪肉加入腌料拌匀,腌二十分钟。Add the marinade to the minced pork, mix well, and marinate for 20 minutes.
Step 3: 免治猪肉顺时针拌至起胶。Stir the minced pork clockwise until it is sticky.
Step 4: 加入马蹄和芫荽碎拌匀。Add the water chestnut and chopped coriander, mix well.
Step 5: 将适量免治猪肉搓成球状,再压成饼状。Knead an appropriate amount of the minced pork into a ball and press it into a cake.
Step 6: 镬内以大火烧热油,下肉饼。Heat oil in a pan over high heat, then add in the patties.
Step 7: 肉饼煎至金黄,盖上镬盖,以慢火煎至熟透。Fry the patties until golden, cover the pan with a lid, and fry over low heat until cooked through.
Step 8: 肉饼上碟,即成。Transfer the patties to a plate, serve.
小贴士 Tips
用大火煎肉饼两面,可以锁住肉汁。Fry the patties on both sides over high heat to lock the juice.
