惹味小菜
三椒煸雞 Stir-fried Chicken with Three Peppers(4人份 4 Servings) 


雞腿肉以三款椒煸炒至入味,微辣爽腍,是佐飯佳品。





































材料Ingredients
雞髀肉 450克Chicken fillet 450g
青辣椒 1隻Green chili pepper 1 pc
黃甜椒 1/2隻Yellow bell pepper 1/2 pc
紅辣椒乾 10克Dried red chili pepper 10g
薑(剁碎)2片Ginger(chopped) 2 slices
葱 2棵Spring onion 2 stalks
油 2湯匙Oil 2 tbsp

 

























雞肉醃料Marinade for chicken
米酒 1湯匙Rice wine 1 tbsp
鹽及糖 各1/4茶匙Salt and sugar 1/4 tsp each
生抽 2湯匙Light soy sauce 2 tbsp
胡椒粉及麻油 少許Pepper powder and sesame oil some

 

























汁料Sauce
水 3湯匙Water 3 tbsp
生粉 1茶匙Cornflour 1 tsp
糖 1茶匙Sugar 1 tsp
麻油 1/2茶匙Sesame oil 1/2 tsp

做法 Method


1. 雞肉去皮及切粒。Skin and dice the chicken fillet.


2. 加入醃料拌勻,醃十五分鐘。Add the marinade and mix well, marinate for 15 minutes.


3. 青辣椒及黃甜椒去籽,切成與雞粒般大小。Seed the green chili pepper and yellow bell pepper and cut into the size of the chicken.


4. 紅辣椒乾去籽,浸水至軟後切成半厘米一段。Seed the dried red chili pepper and soak in water until soft, then cut into 1/2cm section.


5. 葱切段。Cut the spring onion into sections.


6. 鑊內燒熱油,爆香雞粒。Heat oil in a pan and saute the diced chicken until fragrant.


7. 加入薑、葱及三椒炒香。Add the ginger, spring onion and all the peppers, toss well until fragrant.


8. 倒入汁料炒勻,即成。 Pour in the sauce and stir well. Serve.


小貼士 Tips
可把紅辣椒乾換成紅甜椒。You can replace the dried red chili peppers to red bell peppers.
