【趣味食譜】上海粗炒

經典風味上海粗炒(四人份)Stir-Fried Thick Noodles in Shanghai Style (4 Servings)
粗身麵條,配撘椰菜等炒成,口感豐感,屬經典風味。
材料 | Ingredients |
上海粗麵 300克 | Shanghai noodles 300g |
豬肉 120克 | Pork 120g |
椰菜 1/2個 | Cabbage 1/2 piece |
葱 1棵 | Spring onion 1 bunch |
蒜頭 2粒 | Garlic 2 cloves |
油 適量 | Oil some |
豬肉醃料 | Marinade for Pork |
生抽 1/2湯匙 | Light soy sauce 1 tbsp |
糖 1/2湯匙 | Sugar 1/2 tsp |
生粉 1茶匙 | Cornstarch 1 tsp |
汁料 | Sauce |
生抽 2湯匙 | Light soy sauce 2 tbsp |
老抽 1湯匙 | Dark soy sauce 1 tbsp |
糖 1茶匙 | Sugar 1 tsp |
麻油 1茶匙 | Sesame oil 1 tsp |
做法 Method
Step 1:豬肉洗淨及切絲,加入醃料醃十五分鐘。Rinse and slice the pork. Marinate for 15 minutes.
Step 2:椰菜洗淨及切絲,蒜切碎,葱條切段。Rinse and shred the cabbage. Chop the garlic. Cut the spring onion into sections.
Step 3:煲滾水,放入麵條煮至軟身,瀝乾備用。Bring the water to a boil, add in noodles and cook until soft, drain well and set aside.
Step 4:原煲放入椰菜絲,灼至軟身,瀝乾備用。Add the cabbage in the same pot, blanch them in boiling water until soft, drain well and set aside.
Step 5:鑊內燒熱油,爆香蒜頭。Heat oil in a pan, saute the garlic until fragrant.
Step 6:加入肉片炒勻。Add the pork slices and stir well.
Step 7:加入麵條及椰菜炒勻。Add the noodles and cabbage and stir well.
Step 8:加入葱及汁料炒勻,即成。Add the spring onion and sauce and stir well. Serve.
小貼士 Tips:可加入老抽增添色澤。You can add dark soy sauce to give slightly caramel colour to the noodles.
