韭菜花炒雞絲(2人份)
韭菜花與雞肉絲快手煸炒,簡單易做,入口爽脆美味。
| 材料 | Ingredients |
| 雞髀肉 1塊 | Boneless chicken thigh 1pc |
| 韭菜花 100克 | Leek flower 100g |
| 蛋白 1隻 | Egg white 1 pc |
| 生粉 1湯匙 | Cornflour 1 tbsp |
| 油 2湯匙 | Oil 2 tbsp |
| 調味料 | Seasoning |
| 鹽 1/2茶匙 | Salt 1/2 tsp |
| 胡椒粉 1/4茶匙 | White pepper powder 1/4 tsp |
| 米酒 1湯匙 | Rice wine 1 tbsp |
| 麻油 1/2茶匙 | Sesame oil 1/2 tsp |
| 芡汁 | Thickening |
| 清雞湯 1/4杯 | Clear chicken broth 1/4 cup |
| 生粉 1茶匙 | Cornflour 1 tsp |
做法 Method
Step 1: 雞髀肉切絲。Shred the chicken thigh.
Step 2: 加入調味料拌勻,再拌入蛋 白及生粉。Stir in the seasoning and mix well, following with egg white and cornflour
Step 3: 韭菜花洗淨,切成一吋段。Rinse the leek flower and cut into 1- inch sections.
Step 4: 鑊內燒熱油。Heat oil in a pan
Step 5: 放入雞絲炒熟。Add the chicken thigh shreds and fry until done.
Step 6: 加入韭菜花快手煸炒。Add the leek flowers and toss quickly.
Step 7: 芡汁拌勻。Mix the thickening.
Step 8: 倒入芡汁,煮稠即成。Pour in the thickening and cook until thick. Serve.
小貼士Tips:炒雞絲前先拌入1湯匙生油。You can stir in 1 tbsp oil into the shredded chicken before stir-frying.
