趣味食譜|冬瓜百合海鮮羹【603期】

冬瓜百合海鮮羹(2人份)
所用材料簡單,做法亦容易,加入富營養的百合,口感更豐富。
| 材料 | Ingredients |
| 冬瓜 500克 | Winter melon 500g |
| 蝦仁 10隻 | Shrimps 10 pcs |
| 帶子 4粒 | Scallops 4 pcs |
| 鮮百合 2顆 | Fresh lily bulb 2 bulbs |
| 蛋白 1隻 | Egg white 1 pc |
| 薑 2片 | Ginger 2 slices |
| 清雞湯 250毫升 | Chicken broth 250ml |
| 水 750毫升 | Water 750ml |
| 生粉水 適量 | Cornstarch water some |
| 帶子及蝦仁醃料 | Marinade for scallops and shrimps |
| 胡椒粉 1/4茶匙 | Pepper powder 1/4 tsp |
| 紹興酒 1茶匙 | Shaoxing wine 1 tsp |
Step 1: 將蝦仁切粒。 Dice the shrimps.
Step 2: 帶子及蝦仁用醃料醃十分鐘。Marinate the scallops and shrimps for 10 minutes.
Step 3: 鮮百合除去根部,剝成一瓣瓣洗淨,浸水兩分鐘。 Cut the root from the lily bulb, break up into petals, rinse them and soak them in water for 2 minutes.
Step 4: 冬瓜除皮及去籽,然後切粒。Peel and seed the winter melon, then dice.
Step 5: 將蛋白打勻。Beat the egg white.
Step 6: 將冬瓜、蝦仁、帶子、百 合、薑、清雞湯及水放入煲內,煲二十分鐘。Put the winter melon, shrimps, scallops, lily bulb, ginger, chicken broth and water into a pot, boil for 20 minutes.
Step 7: 轉中火,加入生粉水拌勻,煮至湯汁濃稠。Turn to medium heat, add the cornstarch water, stir well, cook until the soup is thickened.
Step 8: 熄火,加入蛋白拌勻,即成。Turn off the heat, add the egg white and stir well. Serve.
小貼士:冬瓜除切粒,也可刨絲,口感更爽滑。In addition to dicing, winter melon can also be shredded for a smoother texture.
