芝士餅焗白鱈魚柳
Baked White Cod Fillet with Cheese Cracker
芝士餅的鹹香帶出魚肉的清甜,可用其他油脂豐富的白身魚代替白鱈魚,同樣美味。
分量:2至4人份 需時:20分鐘
材料:
白鱈魚扒 2件
芝士餅 3包
沙律醬 2湯匙
鹽
水
Ingredients:
White cod fillet 2pcs
Ritz crackers 3 packs
Japanese mayonnaise 2 tbsp
Salt
Water
做法:
1. 水和鹽置大碗內拌勻,直至鹽溶解。
Mix the water and salt in a big bowl, stir until dissolved.
2. 白鱈魚扒置鹽水浸泡,醃製15分鐘。
Put the white cod fillet in salt water and brine for 15 minutes.
3. 白鱈魚瀝乾放入雪櫃,不用包保鮮膜,冷藏一晚,抽乾魚扒水分。
Drain the white cod fillet, put on a plate. Keep in the refrigerator, uncovered and refrigerate overnight to dry a bit.
4. 翌日取出魚扒,去骨。
Take out the fish fillet the next day and remove the bones if necessary.
5. 魚塗抹沙律醬。
Spread the mayonnaise all over the fish.
6. 將芝士餅壓碎。
Crush the cheese crackers within the package before pouring into a plate.
7. 魚扒均勻沾上餅碎。
Coat the fish fillet with cracker crumbs evenly.
8. 魚扒用光波爐或氣炸鍋烤5分鐘或至全熟。
Bake the fish fillet in a microwave oven or an air fryer for 5 minutes or until cooled through.
小貼士:用鹽醃製鱈魚,可令肉質紮實和鮮味。
Tips:Brined fish tends to be firmer in texture and sweeter in flavor.
