鹹鮮煎馬友
Pan-fried Threadfin with Lemon Mayonnaise
馬友魚肉質細嫩、油脂豐富,用鹽水浸泡後肉質比較緊實,味道更鮮美。
分量:2至4人份 需時:45分鐘
材料:
新鮮馬友 1條
鹽
水
沙律醬 少許
油 少許
Ingredients:
Threadfin 1 pc
Fine salt
Water
Mayonnaise some
Oil some
調味料:
檸檬汁 少許
檸檬皮 適量
Seasoning:
Lemon juice some
Shaved lemon peel appropriate
做法:
1. 馬友刮鱗及除去內臟。
Descale and gut the threadfin .
2. 魚洗淨及抹乾。
Wash and dry the fish.
3. 水和鹽置大容器內,用手攪拌,直至鹽溶解。
In a big shallow container, mix the salt with water, use your hand to stir until salt dissolves.
4. 魚放入鹽水浸20至30分鐘,取出抹乾水分。
Put the fish in salted water and brine for 20-30 mins. Take out and pat dry.
5. 魚上碟,不用包上保鮮膜,置雪櫃冷藏一晚,翌日用少許油將魚煎熟。
Put he fish in a plate, uncovered , keep in fridge overnight. Next day, take out the fish, and pan-fry until it's cooked.
6. 沙律醬混合檸檬汁及檸檬皮,伴馬友享用。
Mix some mayonnaise, lemon juice and lemon peel to you taste. Serve with the threadfin.
小貼士:浸過鹽水的馬友,要徹底抹乾水分。
Pat dry the brined threadfin thoroughly.
