【趣味食譜】白汁雜菌意大利飯 Risotto with Mixed Mushrooms in Cream Sauce

意大利飯煙韌有嚼勁,配以白汁忌廉和雜菌,香滑美味。





































































材料 (2人份)Ingredients (2 Servings)
意大利米 200克 Italian rice 200g
蘑菇 50克 Mushrooms 50g      
本菇 40克Marmoreal mushrooms 40g 
秀珍菇 50克 Oyster mushrooms 50g 
洋葱碎 40克Chopped onion 40g
蒜蓉 20克 Minced garlic 20g
百里香 5克 Thyme 5g 
芝士粉 10克Cheese powder 10g
忌廉 100毫升Cream 100ml
白酒 20毫升White wine 20ml 
牛油 30克Butter 30g
清水 適量Water some 
鹽 3克Salt 3g
黑胡椒 5克Black pepper 5g 
油 適量Oil some

做法


Method


step 1:鑊內燒熱油,炒香雜菌,備用。Head oil in a pan. Fry the mixed mushrooms until fragrant. Set aside.


step 2:加入蒜蓉及洋葱碎。Add the minced garlic and chopped onion.


step 3:加入意大利米、百里香及白酒炒勻。Add Italian rice, thyme and white wine, then fry well.


step 4:注入100毫升清水,細火煮三 分鐘至水分收乾。Add 100ml water, simmer for 3 minutes until the liquid is reduced and becomes thick.


step 5:重複步驟4,直至飯粒軟硬適中。Repeat the step 4 until the rice is moderate soft and hard.


step 6:加入雜菌。Add the mixed mushrooms


step 7:加入忌廉及芝士粉拌勻。Add the cream and cheese powder, then mix well.


step 8:加入牛油、鹽及黑胡椒拌勻,即成。Add the butter, salt and black pepper, then mix well. Serve.


小貼士 Tip


忌廉打至稠身,可令意大利飯口感更佳。It will make the risotto taste better if whip the cream up beforehand.
