茄子田乐烧(3至4人份)
茄子以日式面豉调味焗香,口感柔软焦香,是一道零失败的日式家庭料理。
| 材料 | Ingredients |
| 茄子 2条 | Eggplants 2 pieces |
| 橄榄油 1汤匙 | Olive oil 1 tbsp |
| 芝麻 适量 | Sesame some |
| 葱花 适量 | Choppped spring onion some |
| 调味料 | Seasoning |
| 日式芝麻面豉酱 2汤匙 | Miso sesame sauce 2 tbsp |
| 味醂 2汤匙 | Mirin 2 tbsp |
| 糖 1汤匙 | Sugar 1 tbsp |
做法 Method
Step 1: 焗炉预热至180°C,茄子洗净。 Preheat the oven to 180°C and rinse the eggplants.
Step 2: 茄子去蒂及对切,在表面轻轻划出格子状。 Remove the stems and cut the eggplant into halves, and lightly make grids on the surface.
Step 3: 茄子涂上橄榄油。Brush the eggplant with olive oil.
Step 4: 茄子放入焗炉,以180°C焗十分钟。 Bake the eggplant at 180°C for 10 minutes.
Step 5: 调味料拌匀。 Mix the seasoning together.
Step 6: 取出茄子,在表面涂上调味料。 Take out the eggplant and brush the seasoning on top.
Step 7: 茄子放入焗炉以180°C焗八至十五分钟或至表面微焦。 Bake the eggplant again in the oven at 180°C for 8 to 15 minutes or until the surface is slightly charred.
Step 8: 茄子上碟,洒上芝麻粒和葱花,即成。 Dish up the eggplant. Sprinkle with sesame seeds and chopped spring onion and serve.
小贴士 Tips:茄子划出格子状,容易吸收酱汁精华。 Score the flesh of the eggplant into diamonds pattern for better absorption of the sauce.
