麻辣莲藕花生焖猪手(2人份)
猪手、莲藕与花生是经典配搭,焖煮时加入花椒和麻辣酱,即成开胃菜式。

材料 Ingredients

莲藕 200克 Lotus root 200g
冬菇 6只 Dried shiitake mushrooms 6 pcs
花生 20克 Peanuts 20g
干葱 2粒 Shallot 2 pcs
蒜头 2瓣 Garlic 2 cloves
姜 3块 Ginger 3 slices
花椒 2茶匙 Sichuan peppercorn 2 tsp
水 600毫升 Water 600ml
葱粒 适量 Chopped spring onion some
油 适量 Oil some

 

调味料 Seasoning
南乳 1砖 Red fermented bean curd 1 pc
麻辣酱 2汤匙 Sichun hot and spicy sauce 2 tbsp
蚝油 1汤匙 Oyster sauce 1 tbsp
生抽 1汤匙 Light soy sauce 1 tbsp
绍兴酒 1汤匙 Shaohsing wine 1 tbsp
冰糖 15克 Rock sugar 15g
老抽 1汤匙 Dark soy sauce 1 tbsp

做法 Method

 

Step 1: 冬菇用水浸软,去蒂。Soak the dried shiitake mushrooms in water and remove the stems.

Step 3: 猪手连姜片汆水五分钟,沥干。Blanch the pork knuckles with ginger slices in boiling water for 5 minutes. Drain well.

Step 7: 盖上锅盖,以小火焖1小时,熄火焗三十分钟。Cover the pot with a lid and simmer for 1 hour. Turn off the heat and let stand for another 30 minutes.

小贴士 Tips 
不吃辣的话,可不下麻辣酱。Can skip the Sichun hot and spicy sauce if you can't eat spicy food.
