咸鲜煎马友
Pan-fried Threadfin with Lemon Mayonnaise
马友鱼肉质细嫩、油脂丰富,用盐水浸泡后肉质比较紧实,味道更鲜美。
分量:2至4人份 需时:45分钟
材料:
新鲜马友 1条
盐
水
沙律酱 少许
油 少许
Ingredients:
Threadfin 1 pc
Fine salt
Water
Mayonnaise some
Oil some
调味料:
柠檬汁 少许
柠檬皮 适量
Seasoning:
Lemon juice some
Shaved lemon peel appropriate
做法:
1. 马友刮鳞及除去内脏。
Descale and gut the threadfin .
2. 鱼洗净及抹干。
Wash and dry the fish.
3. 水和盐置大容器内,用手搅拌,直至盐溶解。
In a big shallow container, mix the salt with water, use your hand to stir until salt dissolves.
4. 鱼放入盐水浸20至30分钟,取出抹干水分。
Put the fish in salted water and brine for 20-30 mins. Take out and pat dry.
5. 鱼上碟,不用包上保鲜膜,置雪柜冷藏一晚,翌日用少许油将鱼煎熟。
Put he fish in a plate, uncovered , keep in fridge overnight. Next day, take out the fish, and pan-fry until it's cooked.
6. 沙律酱混合柠檬汁及柠檬皮,伴马友享用。
Mix some mayonnaise, lemon juice and lemon peel to you taste. Serve with the threadfin.
小贴士:浸过盐水的马友,要彻底抹干水分。
Pat dry the brined threadfin thoroughly.
