橙香骨 Citrons Spare Ribs
用水果入馔,除可中和肉类油腻感,还可提升味道层次。鲜橙配上猪肋条烹煮,清新可口。
分量:2人份 需时:60分钟
材料:
猪肋排
青甜椒
红甜椒
红洋葱
橙 2个
白醋 1茶匙
冰糖
盐 1茶匙
橙皮碎
油 适量
猪肋排腌料:
生抽 2汤匙
生粉 2茶匙
老抽 1茶匙
米酒 1茶匙
胡椒粉 半茶匙
糖 半茶匙
Ingredients:
Spare ribs
Green bell pepper
Red bell pepper
Red onion
Orange 2 pcs
White vinegar 1 tsp
Rock sugar
Salt 1 tsp
Orange peel
Oil some
Marinade for spare ribs:
Light soy sauce 2 tbsp
Cornstarch 2 tsp
Dark soy sauce 1 tsp
Rice wine 1 tsp
Ground pepper 1/2 tsp
Sugar 1/2 tsp
做法:
1. 猪肋排浸水30分钟,洗净用厨纸抹干,切条备用。
Soak the spare ribs in water for 30 minutes, then rinse well and pat dry with kitchen towel, cut into strips for later use.
2. 甜椒切条,红洋葱切丝。
Cut the bell peppers into strips. Shred the onion.
3. 切少许橙皮碎,备用。将橙一开二,榨出橙汁。
Peel some orange zest for later use, then cut into halves and juice the oranges.
4. 猪肋条加调味料和橙皮碎腌至少一小时。
Marinate the spare ribs with seasoning and orange zest for at least an hour.
5. 镬内烧热油,以中火煎猪肋骨至金黄。
Heat oil in a pan. Fry spare ribs over medium heat until golden brown.
6. 镬中倒去多余油分,下橙汁和冰糖煮滚。
Clear out excess oil from frying pan, pour in juice and rock sugar and bring to a boil.
7. 下醋和盐,加猪肋骨,煮至酱汁浓稠。
Add the vinegar and salt, then add in spare ribs and cook until the sauce thickens.
8. 加甜椒和红洋葱拌匀,上碟即成。
Add in bell peppers, red onion and mix well, dish up and serve.
小贴士:
每个橙的酸甜度都不一样,可自行调校合适口味。
The taste of oranges varies, need to adjust flavour according to self preference.
