杏鲍菇炒肉丝

材料 Ingredients:
1条(ea) 杏鲍菇 king oyster mushrooms
184g 猪腩肉 pork belly
160g 猪颈肉 pork neck
1棵 (pc) 芹菜Celery
1粒 (ea) 红葱头 shallot
3片(pc) 姜片 sliced ginger
小量 QS 盐Salt
小量 QS生抽Soy sauce
方法 Method:
1. 冲洗杏鲍菇、撕条状,把条状浸在清水中。
Wash the king oyster mushrooms. Tear it into strips and soak it in clear water.
2. 冲洗猪腩肉 、猪颈肉, 切条丝。用少少盐 、生抽、 蚝油 腌肉丝。
肉丝在15分钟后加入豆粉(生粉)搅匀。
Wash the pork belly and pork neck, cut into strips.
Marinate it with a little salt, light soy sauce and oyster sauce。Put the cornstarch in and mix well after 15 minutes.
3. 清洗芹菜、切片,待用。
Wash and slice celery, and set aside.
4. 先炒芹菜,洗锅。 再爆香肉丝。
Fry the celery first. Clear the wok and fry the shredded pork.
4. 加油爆香红葱头、姜片,爆香。转大火,加入杏鲍菇、烹至转小金黄色。
加入肉丝,炒一会。加入献汁 (豆粉加水),炒至收汁。
加入芹菜,炒匀后可上碟。
Add oil and sauté shallots and ginger slices until fragrant.
