经典风味上海粗炒(四人份)Stir-Fried Thick Noodles in Shanghai Style (4 Servings)


粗身面条,配撘椰菜等炒成,口感丰感,属经典风味。

































材料Ingredients
上海粗面  300克Shanghai noodles  300g
猪肉  120克Pork  120g
椰菜  1/2个Cabbage  1/2 piece
葱  1棵Spring onion  1 bunch
蒜头  2粒Garlic  2 cloves
油  适量Oil  some

 





















猪肉腌料Marinade for Pork
生抽  1/2汤匙Light soy sauce  1 tbsp
糖  1/2汤匙Sugar  1/2 tsp
生粉  1茶匙Cornstarch  1 tsp

 

























汁料Sauce
生抽  2汤匙Light soy sauce  2 tbsp
老抽  1汤匙Dark soy sauce  1 tbsp
糖  1茶匙Sugar  1 tsp
麻油  1茶匙Sesame oil  1 tsp

做法 Method


Step 1:猪肉洗净及切丝,加入腌料腌十五分钟。Rinse and slice the pork. Marinate for 15 minutes.


Step 2:椰菜洗净及切丝,蒜切碎,葱条切段。Rinse and shred the cabbage. Chop the garlic. Cut the spring onion into sections.


Step 3:煲滚水,放入面条煮至软身,沥干备用。Bring the water to a boil, add in noodles and cook until soft, drain well and set aside.


Step 4:原煲放入椰菜丝,灼至软身,沥干备用。Add the cabbage in the same pot, blanch them in boiling water until soft, drain well and set aside.


Step 5:镬内烧热油,爆香蒜头。Heat oil in a pan, saute the garlic until fragrant.


Step 6:加入肉片炒匀。Add the pork slices and stir well.


Step 7:加入面条及椰菜炒匀。Add the noodles and cabbage and stir well.


Step 8:加入葱及汁料炒匀,即成。Add the spring onion and sauce and stir well. Serve.


小贴士 Tips:可加入老抽增添色泽。You can add dark soy sauce to give slightly caramel colour to the noodles.
