豆豉鲮鱼焖鸡煲
Braised Fried Dace with Salted Black Beans and Chicken
利用豆豉鲮鱼提升鸡肉的味道层次,毋须多加其他食材及调味品也相当滋味。

分量:4人份 需时:30分钟
材料:
鸡件 半只
豆豉鲮鱼 1罐
红葱头 10粒
姜 3片
绍兴酒 1汤匙
红辣椒 1只
蒜苗 1条
豆粉 少许
油 适量
Ingredients:
Fried dace with salted black beans 1 can
Chicken 1/2 pieces
Shallot 10 pieces
Ginger 3 pieces
Shaoxing wine 1 tbsp
Red chilli 1 piece
Garlic bolt 1 stalks
Cornstarch a little
Oil some
调味料:
生抽 少许
糖 适量
Seasoning:
Light soy sauce a little
Sugar a little

做法:
1. 拍扁红葱头。
Press the shallots.
2. 鸡斩件,加生抽、糖及豆粉略腌。
Chop the chicken into pieces. Marinate with light soy sauce, saugr and cornstarch.

3. 将豆豉与鲮鱼分开,鲮鱼切成小块。
Separate the fried dace from the black beans. Cut the fried dace into small pieces.
4. 起油镬,爆香将姜片、红葱头。
Heat oil in a wok, fry the ginger and shallot until fragrant.

5. 加鸡件煎至金黄后𪷽酒。
Fry the chicken pieces until golden brown, drizzle with Shaoxing wine.
6. 下糖、蒜苗、红辣椒及鲮鱼略煮。
Add sugar, garlic bolt, red chilli, fried dace, then cook for a while.

7. 加豆豉盖上镬盖,焖煮。
Add salted black beans, braise with the lid on.
8. 加入煲仔中即成。
Serve the food with a clay pot.

小贴士:将鸡肉预先煎香才焖煮,更香浓惹味。
Tips:Fry the chicken until fragrant before braising for better flavor.
