清蒸柠檬蛋糕食谱及制作示范:

材料 Ingredients
1个(ea) 柠檬皮 Lemon zest
1个(ea) 柠檬汁 Lemon juice
45g 牛油/奶油 Butter
250g 鸡蛋 whole egg
180g 砂糖 Sugar
190g 低筋面粉 cake flour
3.75g 泡打粉 baking powder
做法 Method:
1. 模具铺上烘焙纸,备用。(如使用中式蒸笼,效果更好)
Put the baking paper on the mould. (The cake will be better if using Steamer)
2. 牛油/奶油熔化, 与柠檬皮和汁混合。
Melt the butter, and mix with lemon zest and juice.
3. 低筋面粉和泡打粉混合,过筛。
Mix the cake flour and baking powder and sift.
4. 鸡蛋和砂糖一起,打至发白及出现8字纹。
加入熔化的牛油和柠檬皮和柠檬汁,以折叠形式混合。
再分3次加入面粉,以折叠形式混合,直至无粒状。
休息10分钟。
Whip the egg with sugar until creamy and at the ribbon stage.
Fold the melted butter, lemon zest and juice in, and mix well.
Then fold the flour in, and mix until no lump.
Rest at room temperature 10min.
5. 把混合物倒入模具中。
放在已沸腾的蒸锅中,中火蒸20-24分钟。
*视孚模具大小。
Pour the mixture into mould.
Put it on the boiling water. Turn to med heat, and steam it about 20-25 minutes.
*Depend on the mould size.
