金不换豆酱炒蚬(4人份)
鲜美清甜的蚬肉,配以金不换、普宁豆酱、鱼露及红辣椒炒香,清新惹味。









































材料Ingredients
鲜蚬 1斤Fresh clams 1 catty
蒜头 2粒Garlic 2 cloves
红辣椒 1只Red chili pepper 1
鱼露 1汤匙Fish sauce 1 tbsp
普宁豆酱 1汤匙Puning bean paste 1 tbsp
糖 1汤匙Sugar 1 tbsp
金不换 1/4杯Thai basil 1/4 cup
油 2汤匙Oil 2 tbsp

做法 Method
Step 1: 鲜蚬浸水吐沙。Soak and cleanse the fresh clams in water.


Step 2: 蒜头剁碎。Mince the garlic.


Step 3: 红辣椒切片。Slice the red pepper.


Step 4: 镬内烧热油,放入蒜头、普宁豆酱及红辣椒炒香。Heat oil in a pan, add the garlic, puning bean paste and red chili pepper and fry until fragrant.


Step 5: 加入鲜蚬炒匀。Add the fresh clams and toss well.


Step 6: 加入鱼露及糖调味。Add the fish sauce and sugar to taste.


Step 7: 炒匀后盖上镬盖煮三分钟。Toss well and cover the pan with a lid and cook for 3 minutes.


Step 8: 加入金不换炒匀,即成。Add the Thai basil and stir well, serve.


小贴士 Tips
金不换下镬前,把叶摘下,直接放入即可。Tear the leaves of the basil just before adding to the pan, at its best condition.
