识煮食谱|星级大厨三姐教煮惹味豆豉鲮鱼牛油虾 伴饭佐酒皆宜

喜欢吃豆豉鲮鱼的朋友,留意周日(8月28日)随《星岛日报》附送的食谱书《三姐 创意罐头料理 4》,三姐会教大家烹调五款豆豉鲮鱼料理。今日率先睇三姐示范「豆豉鲮鱼牛油虾」,伴饭佐酒都适合。

豆豉鲮鱼牛油虾
Fried Dace with Salted Black Beans and Shrimps in Butter Sauce
牛油是西餐常用食材,将其伴中虾及豆豉鲮鱼,即成一道全新创作的海鲜料理。

分量:4人份 需时:25分钟
材料:
中虾 8只
豆豉鲮鱼 1罐
牛油 1片
蒜头 1至2瓣
葱 1条
油 适量
Ingredients:
Shrimps(medium size) 8 pieces
Fried dace with salted black beans 1 can
Butter 1 slice
Garlic 1-2 cloves
Spring onion 1 stalk
Oil some
调味料:
酱油 适量
Seasoning:
Soy sauce a little

做法:
1. 蒜头及葱切粒。
Dice the garlic and spring onion.
2. 将豆豉与鲮鱼分开,鲮鱼切碎。
Separate salted black beans from the fried dace. Mince the fried dace.

3. 中虾沾上生粉。
Coat the shrimps with cornstarch.
4. 起油镬,将中虾半煎炸至八成熟,备用。
Heat oil in a wok, half-fry the shrimps until 80% done, set aside.

5. 牛油起镬。
Heat butter in a wok.
6. 加蒜蓉、豆豉爆香。
Fry garlic and saltd black beans until fragrant.

7. 将虾回镬加酱油调味。
Return the shrimps, season with soy sauce.
8. 加葱花炒匀,即成。
Sprinkle with chopped spring onion.

小贴士:鲜虾沾满豆豉鲮鱼的咸鲜,香气扑鼻。
Tips:The shrimps absorb the flavor of the fried dace with salted black beans making it more flavorful.
